Duff Goldman, the genius behind Ace of Cakes, recently told us he dreams of a wedding cake made of meatloaf... iced with mashed potatoes. No, really. He's even considered the cake toppers: "You know what would be cute?" he said. "Little fried chicken drumsticks. Give one a veil and one a top hat."
Savory as that sounds, this doesn't mean Goldman has tired of the real thing—and his newly-released line of "cake" truffles, developed in partnership with Godiva Chocolate, is here to prove it. Goldman got the idea during the SWEET! dessert party at the New York City Food and Wine Festival three years ago and has been developing the perfect truffles with the chocolatier ever since.
What began as 20 cake flavors off the Charm City Cakes menu was eventually whittled down to four winners: butterscotch-walnut (Goldman's personal favorite), chocolate-chip cookie dough, birthday cake, and hummingbird. A lengthy (and torturous, we're sure) tasting process confirmed that these pure chocolate truffles actually tasted like the well-known cakes they were meant to represent.
When it came to decorating his truffles, Goldman faced a new challenge: limitations. His initial designs were met with the response: "Ehh....we don't really have that machine yet." But with a bit of ingenuity and respect for "functional" garnishes (i.e. crystallized maple and dark chocolate chips), they arrived at executable designs that look just as good as they taste—we can vouch for that.
